Jean Baptist VIRLOGEUX invented an omelette for Arnold Bennett when he was chef at the Savoy hotel. I found these lines : "Omelette Arnold Bennett" a classic mixture of smoked haddock, eggs and cheese invented for the novelist Arnold Bennett by Savoy chef Baptiste Virlogeux, who was the inspiration for Roho, a character in Bennett's novel Imperial Palace."
